ODIA DAHI BARA RECIPE | DAHI VADA RECIPE

 Odia Dahi Bara, also known as Dahi Vada, is a popular street food in the state of Odisha, India. It is made by soaking deep-fried lentil balls (baras) in thick yogurt, and is often served with a tangy tamarind chutney and spicy green chutney. Here is a recipe to make this delicious dish at home:


Ingredients:



1 cup urad dal (split black gram)

1/2 cup moong dal (split green gram)

2 green chillies, finely chopped

1 tsp ginger, grated

Salt to taste

Oil for deep frying

2 cups thick yogurt (dahi)

1/2 tsp roasted cumin powder

1/2 tsp red chilli powder

Chopped coriander leaves for garnish


For the chutneys:


1/2 cup tamarind pulp

1/2 cup jaggery

1/2 tsp roasted cumin powder

1/2 tsp red chilli powder

Salt to taste

Water as needed

1 cup fresh coriander leaves

1/2 cup mint leaves

2 green chillies

1 tsp lemon juice

Salt to taste

Instructions:


Rinse the urad dal and moong dal well and soak them together in water for 4-5 hours.


Drain the water and grind the dal mixture in a blender, adding water as needed to make a smooth and thick batter.


Add chopped green chillies, grated ginger, and salt to taste to the batter and mix well.


Heat oil for deep frying in a kadai or frying pan.


Wet your palms with water and take a small portion of the batter in your hand. Shape it into a small ball and gently flatten it. Repeat with the remaining batter.


Fry the lentil balls (baras) in hot oil until golden brown and crisp. Drain on absorbent paper.


To make the tamarind chutney, combine tamarind pulp, jaggery, roasted cumin powder, red chilli powder, salt and water in a saucepan. Cook over medium heat until the mixture thickens.


To make the green chutney, grind together coriander leaves, mint leaves, green chillies, lemon juice and salt to a smooth paste. Add water as needed.


To assemble the Dahi Bara, soak the fried lentil balls in a bowl of warm water for 3-4 minutes. Squeeze out the excess water and place the lentil balls in a serving dish.


Whisk the thick yogurt with roasted cumin powder, red chilli powder and salt to taste. Pour the yogurt mixture over the lentil balls.


Drizzle the tamarind chutney and green chutney over the yogurt.


Garnish with chopped coriander leaves and serve chilled.
